Delicious Low-Carb Breakfast Burrito Recipe

There's no better way to start the day than with a healthy burrito. Try this delicious recipe. Serves 4.

3 whole eggs
5 egg whites
1/2 tsp butter
Nonfat cooking spray
1/4 finely diced onion
1/4 finely diced green pepper
2 tbsp. finely diced, cooked ham
2 tbsp. shredded pepper jack cheese
1/2 cup salsa
Salt and Pepper to taste
4 low carb tortillas

Put a nonstick pan on medium heat. Place a tortilla on the pan for about 30 seconds, then flip it. Let it cook another 30 seconds.

Transfer the tortilla to a plate. Repeat with the other 3 tortillas.

Add the butter and peppers. Cook for 2-3 minutes, stirring occasionally.

Add the onions. Cook another 2-3 minutes, stirring occasionally.

Add the ham, and stir occasionally for another 2 minutes.

Remove the mixture and put the pan back on the heat.

Beat the eggs and egg whites together. Spray the pan with nonstick cooking spray. Add the eggs and scramble them, cooking until they begin to firm up.

Divide the eggs among the tortillas. Sprinkle with about 1/2 tbsp cheese each and top with salsa if desired. Add salt and pepper to taste.
